Cucumber sandwiches are something that I really like. I find them flavorful, light, and still tasty. I also like how easy it is to hide onion in with the cucumber so my kids will actually eat them.
Here is my recipe for cucumber sandwiches:
(Amounts depend on how many cucumber sandwiches you are making)
1 yellow onion chopped finely
1 clove of garlic chopped finely
2 cucumbers chopped
8 oz cream cheese (soften it)
1 cup mayo
1/2 teaspoon of tabasco sauce (you could do paprika instead)
Chop the cucumber, and onion. Drain the juices. Chop the garlic and add to the onion and cucumber. Mix the mayo, cream cheese and tabasco sauce together and then add to the cucumbers and onion. Salt and pepper to taste. Smooth onto sandwiches and enjoy.
